Coleslaw doesn't have to be a calorific high Smart Point accompaniment to your meal any more with this 1 Smart Point recipe.
Prior to starting Weight Watchers I ate a lot of store brought coleslaw. I would eat it with salad, use it as a topping for baked potatoes and I always had it as an accompaniment to breaded chicken.
The particular shop brought coleslaw that I used is a whopping 44 Smart Points for a medium sized tub! I daren't think of the amount of points that I used to use on coleslaw.
So when one of the members at my local Weight Watchers meeting told me that she always made her own coleslaw for 1 Smart Point, I was delighted. I hadn't even though about making my own!
I use Hellmanns Lighter than Light Mayonnaise in this (which strictly speaking probably makes this coleslaw 0SP per portion) but you could use any of the low fat mayonnaise.
Shred the cabbage, carrot and onion as thick or as thin as you want (I prefer thicker shreds) and season with pepper to taste.

Coleslaw
Ingredients
- ½ red cabbage small
- 2 carrots medium
- 1 onion red
- 5 tbsp low fat mayonnaise Hellmans Lighter than Light
- pepper
Instructions
- Shred the cabbage and the onion using a knife or in a food processor.
- Grate the carrots.
- Combine the carrots, cabbage and onion in a large bowl and stir in the mayonnaise. Season with pepper.
