These tasty Smoked Salmon Breakfast Muffins are zero points on the Weight Watchers Blue and Purple plans and 2 points on the Green plan. Easy to make and suitable for freezing!
Preheat the oven to 180°C / 160°C fan / 360°F / Gas mark 4.
Crack the eggs into a large bowl
Add the skimmed milk
Add a pinch of salt (the smoked salmon is salty so just a pinch will do!)
Add a good grinding of black pepper
Beat thoroughly.
Stir in the chopped up salmon and the chives / dill
Spray the bottom of a 12 hole muffin tin with a little calorie controlled oil.
Spoon the egg & salmon mixture into the muffins tin, making sure that each of the holes has some of the smoked salmon pieces and some of the chives / dill!
Place the muffin tin into the centre of the oven for 25 - 30 minutes until they have set and have turned golden brown.
Remove from the muffin tin and serve warm for best results!
