Pumpkin Spice French Toast Casserole | Weight Watchers

Ingredients

  • 4 slices low calorie white bread
  • 2 medium eggs
  • cup pumpkin puree (100g)
  • ¼ cup unsweetened almond milk / fat free milk * (60ml)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¾ tablespoon sugar
  • ½ teaspoon powdered sugar / icing sugar optional for serving
  • Calorie controlled spray oil such as Pam or Frylight

Instructions

  • Preheat the oven to 180°C / 160°C Fan / 350°F
  • Prepare an ovenproof dish approx 8 inch by 6 inch big by spraying with a little calorie controlled spray oil.
  • Tear up the slices of bread into bite sized pieces and place into a bowl.
  • In a different bowl, whisk the eggs with a fork or hand held whisk until they are fluffy, add the milk and whisk again.
  • Add the sugar, pumpkin pie spice and then the pumpkin puree and the vanilla extract and whisk till you are left with a lump free mixture.
  • Pour this mixture over the torn up bread and leave to soak for a few minutes before pouring it in to your prepared ovenproof dish.
  • Place the dish on the middle shelf of the oven and bake for 30 - 35 minutes until the casserole has puffed up and turned golden brown.
  • Remove from the oven and dust with a fine dust of powdered sugar (optional).
  • Serve warm with a small drizzle of sugar free syrup or some maple syrup (extra SmartPoints!)

Notes

* If you swap out the unsweetened almond milk for skimmed milk this increases the SmartPoint value by 1 per serving.
