Spicy Parsnip Soup | Weight Watchers

Ingredients

  • ½ tsp olive oil
  • 1 onion chopped
  • 2 garlic cloves chopped
  • 2 tsp grated ginger
  • 1 tbsp garam masala
  • cups parsnips (600g) topped, tailed & chopped
  • 2 cups skimmed milk (500ml)
  • 1 litre vegetable stock
  • salt & pepper
  • red chilli flakes optional for serving

Instructions

  • Heat the onion in a large saucepan over a medium heat. Add the onions, garlic, ginger and garam masala and stir to combine. Cook for 8 - 10 minutes, stirring often to prevent the mixture sticking to the bottom of the pan. If it does start to stick, add a tablespoon of water. 
  • Once the onions are soft add the chopped parsnips and stir to coat. Add the stock and the the milk and season well with black pepper. Bring to the boil.
  • Once the mixture comes to the boil, turn down the heat, place the lid on the saucepan and simmer for 30 minutes, stirring occasionally. 
  • After 30 minutes the parsnips should be soft. You can check them by piercing them with a knife. If they are cooked through, turn off the heat and use an immersion blender to blend the soup till it is smooth. 
  • Taste the soup and add more salt and pepper if needed. Serve sprinkled with red chilli flakes.
